Abstract
This report from the Carbon Trust found that people could improve their health and reduce the environmental and resource impacts associated with food consumption by eating a greater variety of protein-rich main ingredients.    The report also investigates the practical barriers to changing dietary behaviours, such as culinary skills and cultural attitudes to food.  The report finds that promoting a greater diversity of protein choices in the UK would, in most cases, be an acceptable message that would lead to better overall outcomes for both health and the environment.
